Our recipe calls for two slices of multi-grain bread, 1 tablespoon of Cabot unsalted butter, two large eggs, and four slices of your favorite Cabot cheeses (we personally suggest Cabot Alpine Cheddar , Cabot White Oak Cheddar, Cabot Farmhouse Reserve Cheddar or Cabot Swiss Slices ).
5 Fry it all up, carefully flipping it to melt the cheese into the Egg in a Basket.
When the cheese is melted and the Egg in the Basket is made, transfer the bottom half of the sandwich to the frying pan, melting the butter in the pan first. Thoroughly butter the ramekins. Break one egg into each ramekin and grind fresh pepper over the eggs. Top with 1-2 Tablespoons chopped ham or bacon, if using. Add a tablespoon of the asiago cheese over the bread, then crack an egg on top of the cheese. Sprinkle about 1 Tablespoon of shredded cheese into each bread lined dish. Eggs in a basket is a simple dish that doesn't require a lot of time or preparation to make. Top with another tablespoon of asiago cheese, season with salt and pepper and garnish with parsley. Be generous with the cheese! Add a slice of brioche bread to the bottom of the ramekin and press tightly.
